A Lifetime Love of the Woods and Waters
- Korean Inspired Field to Plate Chef

“There are two spiritual dangers in not owning a farm. One is the danger of supposing that breakfast comes from the grocery, and the other that heat comes from the furnace.”
― Aldo Leopold, A Sand County Almanac

Who I Am
A Lifetime Love of the Woods and Waters...
Born in South Korea while my Father was stationed there. Moved back Stateside as a young boy when he retired, I was raised in the woods and waters of South Jersey. Big Water Duck Hunting, Pine Barrens wild bobwhite quail, ruffed grouse, and woodcock were the norm in my youth. I began guiding duck hunts as a teenager, paid gleeful attention to the wonders of my mother’s Korean kitchen, and set out on a journey to combine those flavors with the game I collected.
My passion is exploring and experimenting with new recipes that honor the memory of my Mother and Father. The struggles of their youth, their investment in me, and their cultures make me who I am. The essence of myself is the gift from them.
My father, a Depression-era youth with many siblings to feed, learned to cook when his mother was ill and helped to run the household as the oldest child. My mother, a child of the Japanese Occupation and war-torn South Korea, learned to do much with almost nothing. The memory and fragrances of her kitchen sustain me every day of my life.
God willing, I do my best to honor them both here in food and memories.
